iTunes 4.0. The ONLY version of iTunes that can stream your library over the internet.
...
There is third party software that will make this possible, and you can fake it by redirecting your iTunes library on a client Mac to the library on a server Mac (creating a shortcut to that server Mac's library). Doing that requires you to connect via AFP.
Of course any version of iTunes can share over a home network, but only 4.0 can share over the net natively.
Apple eliminated the option with version 4.0.1, released quite quickly after 4.0 and Apple has never put the option back.
The downside of using 4.0 of course is that you don't get any of the features of later versions and it's interface is much simpler.

iTunes 4.0 (2003.04.28) added support for the iTunes Music Store and the AAC audio codec, which included digital rights management (DRM). Apple also introduced music sharing with iTunes 4.0. (aus lowendmac.com)
